Red Velvet Cupcakes

I made these red velvet cupcakes for a party last weekend. I have made them several times before, but for some reason I have only blogged about them once. I love this recipe because it offers a very unique cupcake. The texture is dense and crumbly and packed with a complex flavor resulting from the cinnamon and cocoa powder. I am definitely a fan of these. If you try making them, let me know what you think. And of course, as usual, I suggest pairing with cream cheese frosting. YUM.

Notes:

–make sure the butter is not too warm or they will not rise

–do not tap the pan on the counter prior to baking as you do with the Oatmeal Cupcake recipe

 

Strawberry Lime Cupcakes with Cream Cheese Frosting

I was a bit wary about the combination of strawberry and lime in a cupcake but I decided to give it a go anyway. What a fantastic surprise! The freshness of the two flavors is a winning combination! The lime flavor was not overpowering and really complemented the strawberries nicely. I kept these in the fridge just until serving time, which turned out to be a great move. I served them on one of these excruciatingly hot Boston days and the coolness of the cake and the frosting really enhanced the freshness of the flavors.  The cream cheese frosting continues to speak for itself.  If you haven’t tried it yet I have only two words: you must!

Here are some other recipes using cream cheese frosting. (I promise–your friends and family will thank you!)

Strawberry Lime Cupcakes with Cream Cheese Frosting:

  • 1/2 pound (1 stick) butter at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 pint fresh strawberries, chopped into bite size pieces
  • 2 teaspoons fresh lime juice (about one lime)
  • 1 teaspoon grated lime zest (about one lime)

Preheat the oven to 350 F.  Fill one cupcake pan with liners.

In the bowl of a stand mixer cream together the butter and sugar with an electric mixer on medium speed until fluffy, about 5-7 minutes.

Add the eggs one at a time, beating well after each.

In a separate bowl whisk together the flour, baking powder, and salt.

Add the dry ingredients to the creamed mixture, alternating with the milk. Use a rubber spatula to fold in the vanilla, strawberries, lime juice, and lime zest into the mixture.

Fill the cupcake liners 1/2 – 3/4 full. Bake for 26-30 minutes, or until a wooden skewer or toothpick inserted into the center of the cupcakes comes out clean. Cool cupcakes in pan for ten minutes and finish cooling on wire rack before frosting.

Oatmeal Birthday Cake with Cream Cheese Frosting

Remember last year when I made this cake for the first time for my father-in-law’s birthday? It was a huge hit and has been the most requested cake ever since. My husband’s family especially LOVES this cake! They request it for most occasions and I am always happy to oblige! I love making it!  I made it for my brother-in-law’s 30th birthday, I have made it in cupcake form multiple times and I even demonstrated the recipe for How2Heroes!

My father-in-law’s birthday is this week and for the celebration the family requested that I make this cake again this year and  I was very happy to!  This time I decided to jazz it up by adding some crushed candied pecans to the sides of the cake. As usual, it received the typical moans, “ooos,” and “ahhhs” but there was one new quote by a family member who shall remain nameless:

 “I could SWIM in it!”

Yes, my friends, the frosting is THAT good!

Oatmeal Cake with Cream Cheese Frosting and Pecans:

  • 1 tablespoon  all-purpose flour
  • 1 1/3  cups  boiling water
  • 1  cup  quick-cooking oats
  • 3/4  cup  granulated sugar
  • 3/4  cup  packed dark brown sugar
  • 1/3  cup  vegetable shortening
  • 2  teaspoons  vanilla extract
  • 3  large eggs
  • 1 1/2  cups  all-purpose flour
  • 1  teaspoon  baking soda
  • 1  teaspoon  ground cinnamon
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  ground nutmeg
  • 1/2  cup  buttermilk
  • Cream Cheese Frosting
  • pecans for garnish

Preheat oven to 350 F.

Coat bottoms and sides of 2 (9-inch) round cake pans with shortening and dust well with flour.

Combine boiling water and oats in a medium bowl; let stand 20 minutes. Beat granulated sugar, brown sugar, shortening, and vanilla at medium speed of a mixer for 5 minutes. Add eggs, 1 at a time, beating well after each addition. Add oatmeal, beating until blended.

Combine 1 1/2 cups flour, baking soda, cinnamon, salt, and nutmeg, stirring well with a whisk. Add flour mixture to sugar mixture alternately with buttermilk, beginning and ending with flour mixture.

Pour batter into prepared pans. Sharply tap pans once on counter to remove air bubbles. Bake at 350 F for 30-35 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on a wire rack.

Place 1 cake layer on a plate; spread layer with frosting (recipe below), and top with the remaining layer. Spread the remaining frosting over the top and sides of cake.   Decorate with pecan halves. Store the cake loosely covered in refrigerator.

Cream Cheese Frosting:

  • Two 8-ounce package of cream cheese, at room temperature
  • 12 tablespoons unsalted butter, at room temperature
  • 3 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

In a medium bowl, cream together the cream cheese and butter using an electric mixer, until smooth.  Slowly sift the confectioners’ sugar into the butter/cream cheese, about one cup at a time.  Continue to beat until all lumps are gone.  Add the vanilla and mix until fully combined. 

Mini Chocolate and Pumpkin Whoopie Pies

I am very late in sharing with you these little bites of heaven!  I made them for a Halloween potluck luncheon and everyone seemed to really enjoy them.  The cakes are very puffy and fluffy.  The filling is light and sweet.  The pumpkin gives the filling an orange tint.  (If you want to be especially festive you could add a few drops each of yellow and red food coloring to enhance the orange/black contrast!)  These were great for Halloween, but I think they are a very nice fall treat in general.  They would certainly add some spunk to a traditional Thanksgiving table.  (Minus the eyeballs, of course!)

I love packaging treats individually these days!  I just can’t get enough of it!  Not only does it look super cute, but I find people enjoy slipping a treat into their pocket or purse for later–especially after a heavy meal.

Cakes

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon unsalted butter, softened
  • 1/4 cup shortening
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Filling

  • 4 ounces cream cheese, at room temperature
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup confectioners’ sugar
  • 1/4 cup canned pumpkin
  • Pinch of cinnamon
  • Pinch of nutmeg
  • Preheat oven to 375 F. Sift together flour, cocoa powder, baking soda, and salt into a medium bowl and set aside.

    Place butter, shortening, and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on high speed until smooth, about 3 minutes. Add egg and mix until pale and fluffy, about 2 minutes. Mix in half the flour mixture, then the milk and vanilla. Mix in remaining flour mixture.

    Drop about 2 teaspoons dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake until cookies spring back when lightly touched, 12 to 14 minutes. Transfer baking sheets to wire racks and let cool 10 minutes. Remove cookies from baking sheets and transfer to wire racks.  Cool completely.

    In the bowl of a mixer fitted with the paddle attachment, whip together cream cheese, butter and confectioners’ sugar on medium speed until smooth, about 3 minutes. Add pumpkin, cinnamon, and nutmeg.  Whip until smooth

    Spoon about 2 teaspoons filling on the flat sides of half the cookies. Sandwich with remaining cookies.

    Mini Chocolate Cupcakes with Silver Peanut Butter Frosting

    The recipe in the previous post makes enough batter for three round cake pans yet I only have two.  Rather than wash, cool, and reuse one of the cake pans to make a sky high cake, I decided to use the remaining batter to make mini cupcakes!  (Luckily, I also had quite a bit of leftover peanut butter frosting.)

    What’s funny is my intention was to make the frosting purple.  Into the frosting I whipped several drops of Wilton red and blue gel coloring.  However, because the frosting was taupe to start (the color of the peanut butter) rather than achieve the royal purple I had intended I ended up with this silvery gray color–and I love it!  I topped each cupcake with silver sprinkles and it totally works on this aluminum serving piece.  There is both eeriness and elegance to them.  If you want to make these cupcakes follow the recipe for the cake and frosting here
